LAMB BURGER

2 lb. lean ground lamb
1/2 c. minced green pepper
1/4 c. soy sauce
2 tsp. grated lemon rind
1/2 tsp. ground ginger
6 unsweetened pineapple slices
6 Tbsp. plain low-fat yogurt

Gently mix together lamb, green pepper, soy sauce, lemon
rind and ginger. Shape into 12 patty, slightly larger than the
pineapple slices. Top 6 of the patties with a pineapple slice.
Spoon 1 tablespoon of yogurt into center of each. Top the
pineapple with another lamb patty. Pinch the edges together
all around to form a large burger. Grill about 4-inches above
heat for 6 to 8 minutes per side or to desired doneness.
