1 3/4 c. flour
1 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 Tbsp. shortening, melted
2 c. whole kernel corn
1 egg, beaten
Sift dry ingredients, combine eggs, milk and shortening.
Mix liquid and dry ingredients just enough to combine. Add the
corn and drop from teaspoon or tablespoon into hot fat. Turn
as soon as fritter comes to the top. Remove from fat when well
browned, probably about 1 1/2 minutes.
