BOILED COD WITH WHITE CREAM GRAVY

Soak out enough salt cod to feed your family. Cook
until full done and set off to a side.
White Cream and Carrot Gravy: In frying pan melt butter
or margarine on medium-low heat. (Do not let butter burn.)
Stir in white flour and keep stirring so it won't burn.
Sprinkle pepper all over flour and butter mixture. Make sure
you're stirring the whole time. Gradually add about 2 cans
evaporated milk. If mixture is too thick, add some water to
this mixture but don't thin it too much. The gravy is on the
thicker creamy side. After your gravy comes to a boil, add 1
can cooked sliced carrots. Use the juice from carrots to add
flavor to gravy. Taste gravy and season to the way you want
it. Remember, the cod is already salty so you want to keep
gravy more on the bland side. Serve this with boiled potatoes
with the skins on.
