MICKEY'S CALIFORNIA CHEESECAKE

Crust:

1 large box vanilla wafers
1 stick melted butter

Roll wafers into fine crumbs. Mix with melted butter
and press into a 10-inch spring-form pan.

Cheese Filling:
2 lb. cream cheese
1 pt. sour cream
1 1/2 c. sugar
1/8 tsp. salt
4 eggs
1 Tbsp. lemon juice
1 Tbsp. vanilla flavoring
Beat eggs and sugar until thick. Cream the cheese and
sour cream. Add eggs and sugar mixture. Add salt, vanilla and
lemon juice. Cream well. (I put mine in the food processor.)
Pour into pan. Bake at 375 degrees for 30 minutes. Cool 3 hours.
Then place in refrigerator overnight. Next day, remove from
pan. Can be frozen.
This cake is large, but very creamy and light. Will
serve 20.
