APPLE CARROT SALAD 2 c. shredded carrots 1 1/2 c. diced unpeeled apples 1/2 c. raisins 1/4 c. chopped nuts 1/2 c. mayonnaise 2 Tbsp. honey Combine shredded carrots, apples, raisins and chopped nuts; set aside. Combine mayonnaise and honey, stirring well. Pour dressing over carrot mixture and toss until coated. Cover and chill. Serve on lettuce leaves if desired.
