CREAM OF BROCCOLI AND POTATO SOUP|
4 medium potatoes, cubed and
1 pkg. frozen broccoli, cut up
3 Tbsp. butter
1/4 c. onion, chopped
2 c. milk
1 c. water
3 Tbsp. flour
4 oz. Velveeta cheese, cubed
1/2 c. celery, cooked with
1 can cream of potato soup
Melt butter in large saucepan (do not scorch). Turn
heat to low and add onion. Once onion is cooked through, add
flour and stir until smooth. Add milk and water and heat over
medium heat until thick. Stir occasionally scraping bottom of
pan. Once sauce is bubbly and thick, add cheese and stir until
melted. Add potatoes and broccoli that have already been
cooked. Cover and let simmer for 1/2 hour. Add salt and
pepper to taste.
