MANHATTAN CLAM CHOWDER|
2 1/2 Tbsp. bacon
1 medium onion, chopped
1 medium stalk celery, diced
1/3 green pepper, diced
1 carrot, diced
1 medium potato, diced
1 tsp. salt
1/8 tsp. pepper
2/3 c. water
1 c. tomato, diced
1 bay leaf
1/4 tsp. thyme
1 (8 oz.) can minced clams
Cook bacon in saucepan until brown. Add onion. Add
everything else except clams. Cook gently for 1 hour. Add
clams. To thicken, use flour or add bread crumbs.
