AUNT JANE'S "FROG EYE" SALAD

Cook "Frog Eye" type macaroni according to directions,
adding 1 tablespoon oil to boiling water. Jolynn used Gamesa
brand melon seed, 7-ounce package. Drain cooked macaroni;
rinse, drain again and leave at room temperature. Cook the
ingredients over medium heat until thick:

1 c. sugar
2 Tbsp. flour
1/2 tsp. salt
1 3/4 c. pineapple juice,
drain from canned
chunk-style
2 beaten eggs
1 Tbsp. lemon juice
Cool. Mix to macaroni and chill overnight. Add to
mixture:
3 (11 oz.) cans drained
Mandarin orange sections
2 (20 oz.) cans drained chunk
pineapple
1 (20 oz.) can drained,
crushed pineapple
1 (9 oz.) container Cool Whip
2 to 3 c. miniature
marshmallows
Stir and chill until serving.
"Frog Eyes" is a type of macaroni originating in Utah.
It is small and round in shape; hence the name "Frog Eye
Salad".
