FRESH MUSHROOM SOUP|
6 Tbsp. butter
1 c. chopped onions (sweet,
2 cloves garlic, chopped
6 Tbsp. flour
5 c. chicken broth
1 bay leaf
1/8 tsp. thyme
salt and pepper to taste
3 c. sliced mushrooms (fresh)
2 Tbsp. butter
1 c. cream or half and half
4 tsp. chives
Saute garlic and onions until limp with 6 tablespoons
butter then add 6 tablespoons flour. Cook for 3 minutes. Beat
in broth and seasonings. Saute mushrooms in 2 tablespoons
butter and add to broth. Cook for 15 minutes then add cream
and chives and serve.
