4 medium sweet potatoes
1/2 c. peanut or vegetable oil
1/2 tsp. salt (optional)
1/2 tsp. pepper
1/2 c. chopped celery
1/2 c. chopped green pepper
1/2 c. thinly sliced green
chopped parsley for garnish

Place cubed potatoes in glass or plastic bowl. Mix oil,
lemon juice, salt and pepper; pour over potatoes. Cover and
refrigerate at least 4 hours. Stir in celery, green pepper and
onion. Garnish with parsley. Makes 6 servings.
