SENATE BEAN SOUP

1 lb. navy beans
1 meaty ham bone
1 c. onion, chopped
1 c. celery, chopped
1 tsp. salt
1/2 tsp. pepper
1 tsp. nutmeg
1/2 tsp. oregano

Soak beans overnight. In large pot, cover beans with 6
to 8 cups hot water. Bring to boil; boil 2 minutes. Remove
from heat; cover and let stand 1/2 hour. Drain; add 2 quarts
cold water and ham bone. Bring to boil for 1 1/2 hours. Stir
in remaining ingredients; bring to boil and cook until beans
are tender.
