FATHER GOULD'S POZOLE
(Hominy Soup)
1 1/2 lb. pork (cut in small
pieces or pork loin
country-style ribs)
2 to 3 chicken breasts
6 c. chicken stock
1 large onion, coarsely
chopped
1/2 green pepper, coarsely
chopped
1 tsp. salt
1 tsp. ground black pepper
1 tsp. comino (ground cumin)
1 (30 oz.) can white hominy,
drained
1/2 tsp. garlic powder
1 (16 oz.) can Italian-style
stewed tomatoes

Place the pork, along with the stock, onion, green
pepper and garlic powder in a kettle and bring to a boil. Cook
for 15 minutes. Add chicken breasts, and continue cooking
until the meat is done. Take the meat from the kettle, take
out any bones and cut the chicken into small pieces, then
return the meat to the kettle. Add the comino. Add the hominy
and the tomatoes; bring to a boil and simmer for 15 minutes.
Taste and adjust the seasoning to your taste. This is basical-
ly a one-dish meal. Serves 4 to 6.
