CLAM CHOWDER
(Basic Chowder Recipe That Is Easy and Tasty)
1 qt. soft clams or 25
quahogs
1/4 c. diced salt pork
1 c. sliced onions
4 c. diced potatoes
1/2 tsp. salt
1/4 tsp. pepper
2 1/2 c. boiling water

Drain clams, saving juice. Chop clams. Cook salt pork
until lightly browned in large saucepan. Add onions and cook
to a light yellow. Add potatoes, salt, pepper and water; cook
10 minutes, then add clam juice and clams. Simmer until
potatoes are done. To this basic chowder, you may add milk or
tomato, if you prefer. Also this plain chowder will keep well
in the refrigerator for future use. Chowder is always better
the second day.
