CLAM CHOWDER

2 medium onions
2 large potatoes
2 c. water
2 bottles clam juice
3 cans minced clams
2 c. half and half
1 c. milk
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. butter
2 Tbsp. flour

Saute chopped onions in butter for 3 to 4 minutes. Can
also add chopped celery if you like. Add the water, clam
juice, clams, potatoes, salt and pepper. Cover and simmer 1
hour. In a small saucepan melt the 2 tablespoons butter, stir
in flour and cook briefly until the mixture is smooth and
thick. Pour the white sauce slowly into clam chowder, bring to
a boil, stir in half and half and the milk. Simmer 5 minutes.
