1 small bunch spinach
1 large tomato, diced
1/4 large onion, chopped or to

Wash and shred spinach. Add onion and tomatoes. Serve
with bacon dressing. Garnish with hard-cooked eggs.

Bacon Dressing:
2 to 3 strips raw bacon, diced
1/2 c. water
1/8 to 1/4 c. vinegar
1 to 2 Tbsp. sugar
pinch of salt
1 speck cayenne
Cook bacon slowly until brown. Add remaining ingredi-
ents; heat to boiling point. Serve at once on spinach salad.
Makes 2/3 cup.
