Cover with water to 2-inches above beans and soak overnight. Drain beans and add 2 quarts of water, ham, onion, garlic and salt. Cover and bring to boil, reduce heat and simmer 1 1/2 hours, add remain- ing ingredients and simmer 20 minutes stirring occasionally.
