WELSH RAREBIT
(Or Welsh Rabbit)
8 oz. Cheddar cheese, grated
2 Tbsp. butter
1/4 c. stale beer
1 whole egg
1/4 tsp. Worcestershire sauce
1/4 tsp. paprika
dash of cayenne
1/4 tsp. dry mustard

Place in double boiler the cheese, butter and beer.
When mixture is melted to a smooth consistency, beat in egg.
Then add for seasoning the Worcestershire sauce, paprika,
cayenne and dry mustard. Serve over toast or toasted English
muffin.
