BEAN SOUP

1 lb. navy beans

Wash navy beans in cold water and drain. Put in big
bowl, cover with water and let set overnight (they will swell).
Pour water off.
Add fresh water (cover over beans well). Add smoked
meat (ham, salt pork, pork necks) and simmer until beans are
down, 3 to 4 hours, adding more water as necessary.
One hour before serving add: 3 to 4 potatoes, 1 onion
and 1 to 2 carrots (sliced wafer thin). Cook until done. Add
salt and pepper to taste while cooking.
