1 (6 oz.) pkg. lime jello
1 (10 oz.) pkg. finely chopped
1/2 c. chopped celery
2 Tbsp. chopped onion
1 c. mayonnaise
2 Tbsp. wine vinegar
2 c. water
Dissolve 1 cup boiling water and then 1 cup cold water
in gelatin. Add this starts to set, whip in mayonnaise. Fold
in remaining ingredients. Refrigerate in 9 x 9-inch dish. The
spinach should be cooked after it is chopped and then drained
well before being folded in. Serves 9.
