GRAPEFRUIT SALAD WITH HONEY FRUIT DRESSING

3 grapefruit
1/3 c. sugar
1 tsp. salt
1 tsp. paprika
1 tsp. mustard
1/4 tsp. pepper
1/4 c. lemon juice or mild
vinegar
3/4 c. Mazola oil
a few drops of onion juice
1/3 c. strained honey
1 tsp. celery seed

Prepare grapefruit sections. Remove outer hull from 3
grapefruit. Pull fruit apart into halves. Split membrane of
exposed upper section by tearing it open with thumb and fore-
finger and loosening it with a downward movement toward the
base of the segment until the segment is free from membrane.
Lift up segment and free it from inner and outer membrane.
Repeat with each section. A thin white rib may remain partly
imbedded in the base of the segment but it need not be entirely
removed. Marinate grapefruit segments in Honey Fruit Dressing
overnight and serve with endive.
Beat all ingredients of dressing together or shake in a
tightly covered jar or bottle.
