TABOULEH

1 c. boiling water
1 c. kasha (Bulgar wheat)
1 1/2 c. chopped parsley
2/3 c. finely chopped green
onions (use stems too)
1/2 c. fresh mint, chopped
fine
1/2 c. cucumbers
1/2 c. chopped olives
3 fresh tomatoes, chopped fine
1/2 c. olive oil
4 Tbsp. lemon juice
concentrate
4 Tbsp. lime juice

Pour boiling water over the kasha. Let kasha stand to
absorb water, approximately 10 minutes. Drain off excess
water. Add parsley, onion, cucumbers, mint and tomatoes to
kasha. Add oil, lemon concentrate and lime juice. Chill and
serve. This is a good patio salad. Lots of fresh tomatoes in
the summer in Sacramento.
