ITALIAN SAUSAGE SOUP|
1 1/2 to 2 lb. Italian
sausage, sliced in 1/2-inch
2 cloves minced garlic
1 large (28 oz.) can chopped
1 large onion, chopped
3 cans beef broth
3 medium zucchini, sliced
1 1/2 c. dry red wine
1/2 tsp. basil
5 to 7 oz. pkg. tortellini
In a 5 quart pot brown sausage and add garlic and onion.
Cook until limp. Add remaining ingredients except zucchini and
tortellini. Cook uncovered 25 minutes; add uncooked tortellini
and zucchini; cover and cook 30 minutes. Serve with Parmesan
cheese on top.
