MOM'S MIDDLE EASTERN CHICKEN|
2 Tbsp. oil
1 c. chopped onion
3 cloves minced garlic
1 (3 lb.) chicken, cut up
2 1/2 c. chicken broth
2 tsp. curry powder
1 tsp. salt
1/2 tsp. mint leaves
1/8 tsp. saffron
6 whole cloves
dash of cinnamon
1 1/2 c. raw rice
1/2 c. raisins
1/2 c. roasted peanuts
Heat oil; add onion and garlic. Brown. Add broth,
curry, salt, mint, saffron, cloves and cinnamon; add chicken
pieces. Bring to boil; reduce heat and simmer 45 minutes.
Sprinkle in rice and raisins. Simmer covered 25 minutes. Add
peanuts and serve.
