IRON POT CHICKEN PURLO|
1 lb. smoked sausage, thinly
1 lb. thin-sliced butt meat or
2 c. chopped onions
2 Tbsp. black pepper
2 1/2 Tbsp. salt
2 medium fryers, cut up
6 c. rice
12 c. water
Fry sausage and butt meat 5 to 7 minutes in iron pot.
Add onions, chicken and seasonings. Steam cook until chicken
is tender. Add water and bring to a boil. Add rice. Cook
approximately 30 to 40 minutes, until rice is fluffy. As rice
gets done, you need less heat.
