BROCCOLI, RICE AND CHICKEN|
1 whole chicken, cooked
1 large pkg. frozen broccoli
1 stick margarine, melted
1 c. long grain rice, washed
1 can beef consomme
1 can onion soup
1 medium can mushrooms
2 cloves garlic
Remove chicken from bones; set aside. Drain broccoli;
set aside. Cook rice as follows in large casserole dish.
Place the melted margarine, rice, beef consomme, onion soup,
mushrooms and garlic, one on each end of dish. Bake 1 hour at
325 degrees. Remove garlic. Make sauce.
1 can cream of mushroom soup
1/2 c. milk
1/4 c. mayonnaise
1/4 c. Worcestershire sauce
Mix all ingredients well. Assemble as follows: place
broccoli on top of rice; place chicken atop of broccoli;
spoon sauce over chicken; top with grated cheese; heat in oven
at 375 degrees until bubbly for 20 to 30 minutes.
