HAM WITH SCALLOPED POTATOES

2 Tbsp. butter
1 1/2 Tbsp. flour
2 c. milk
1 tsp. salt
pepper to taste
1 small onion, chopped
1 Tbsp. oil or shortening
2 lb. ham slices, cubed
5 medium potatoes, peeled and
sliced

Melt butter in saucepan; blend in flour. Add milk and
cook until smooth, stirring constantly. Add salt, pepper and
onion. Heat oil in large skillet; brown ham. Remove and place
potatoes and ham in layers in skillet and cover with white
sauce. Cook, covered, over medium heat until potatoes are
tender. Pork chops may be substituted for ham. Makes 5 or 6
servings.
