NIGHT BEFORE FRENCH TOAST CASSEROLE

1 (10 oz.) loaf French bread
8 large eggs
3 c. milk
4 tsp. sugar
3/4 tsp. salt
1 Tbsp. vanilla
2 Tbsp. butter
cinnamon to taste

Butter a 9 x 13-inch pan. Cut bread into 1-inch thick
slices and arrange in one layer on bottom of pan. In a large
bowl, beat eggs with milk, sugar, salt and vanilla. Mix
thoroughly. Pour over bread. Cover with foil and refrigerate
4 to 36 hours. When ready to bake, uncover pan; dot with
butter and place in a preheated 350 degrees oven. Bake 45 to 50
minutes or until bread is puffy and lightly browned. Remove
from oven and let stand 5 minutes. Serve with your choice of
syrup, honey, yogurt, sour cream sweetened with brown sugar or
fresh fruit. Even leftovers are delicious!!!
