TEX-MEX EGGS

1 Tbsp. oleo
1 small onion, chopped
1 clove minced garlic
1 small bell pepper, chopped
2 stalks celery, chopped
1 (4 oz.) can green chilies
2 jalapenos, chopped
1 (16 oz.) can tomatoes,
chopped
2 Tbsp. chili powder
dash of Tabasco and
Worcestershire sauce
salt and pepper
1/2 lb. grated Cheddar cheese
4 eggs

Heat oleo and saute onion, garlic, bell pepper and
celery until onions are transparent. Add rest besides cheese
and eggs and cook until seasonings are well mixed, about 15 to
20 minutes. Pour into ovenproof casserole dish or pan. Stir
in cheese and mix well. Break eggs over top. Bake at 350 degrees
until eggs are almost set. Remove from oven. Sprinkle with
balance of cheese. Return to oven and bake until eggs are set
and cheese is melted. Serve over tortillas.
