FRIED RICE

2 eggs, beaten
1 Tbsp. olive or salad oil
1 c. shredded, cooked shrimp,
ham or pork
6 green onions (including
tops)
4 c. cold, cooked rice
2 to 4 Tbsp. soy sauce
1/2 tsp. sugar
salt to taste

Fry beaten eggs until firm in oil. Remove from heat and
cut into shreds. Return egg to pan with meat; add onion. Cook
over medium heat, stirring constantly, 3 to 4 minutes. Add
rice. Mix soy sauce, sugar and salt. Dribble over fried rice.
Stir until rice is hot.
