SPAETZLE
(German Noodles)
2 c. flour
1/2 c. water
3 eggs, beaten
1/2 tsp. salt

In 4 quart saucepan, heat 8 cups of salted water to
boiling. Meanwhile, in medium bowl, mix flour and salt and add
beaten eggs and water. Mix until you have a smooth dough.
Reduce heat to medium. Over simmering water, press dough with
rubber spatula, through colander or grater with large holes.
Stir water gently so spaetzle do not stick together. Cook
until spaetzle rise to surface of water and are tender, but
firm (al dente); drain.
