TAQUITOS

1 to 1 1/4 c. Machaca meat or
2 cans canned roast beef
16 to 20 corn tortillas
oil for frying
1 c. cheese, grated
Guacamole

Wrap tortillas in foil. Heat in oven about 15 minutes
at 350 degrees or in microwave 1 or 2 minutes until softened. Place
about 1 tablespoon meat and a little cheese in a narrow strip
at one end of each tortilla. Roll up tightly. Fasten with
toothpick. Heat oil. Fry several taquitos at a time until
crisp. Drain on paper towels. Remove picks.
To freeze, refrigerate about 1 hour after frying. Wrap
10 at a time in heavy foil or freezer wrap. Use within 2
months. To use frozen taquitos, cover lightly with foil and
bake in oven at 350 degrees for 2 to 30 minutes until heated through.
Serve with Guacamole.
