CHICKEN PARMESAN

1 c. grated Parmesan cheese
1 (3 oz.) can French fried
onions, crushed
1/4 c. dry bread crumbs
1/2 tsp. paprika
1/2 tsp. salt
1/4 tsp. onion powder
dash of cayenne pepper
1 egg
2 Tbsp. milk
1 (3 lb.) broiler/fryer
chicken
2 Tbsp. butter, softened

Preheat oven to 375 degrees. Combine 3/4 cup Parmesan cheese,
French fried onions, bread crumbs, paprika, salt, onion powder
and pepper in shallow pan. Beat egg and milk in another
shallow pan. Beat egg and milk in another shallow pan. Cut
chicken in serving pieces and dip in egg milk mixture. Arrange
skin side up on 10 x 15-inch jelly roll pan. Pieces should not
touch. Bake at 375 degrees for 45 minutes. Remove from oven. Brush
with butter and sprinkle remaining 1/4 cup Parmesan cheese.
Bake 15 minutes. Makes 4 servings.
