CHUCK'S FRIED RICE

2 c. long grain rice
3 1/2 c. cold water
1 medium onion
2 cloves garlic or 1 tsp.
minced garlic
1 pkg. fried rice seasoning
mix
1/4 c. soy sauce
1 tsp. sesame oil (optional)
3 or 4 eggs, scrambled
1/4 to 1/2 lb. sauteed, sliced
mushrooms
1/4 lb. diced ham or chicken
1/4 c. oil (peanut oil is
preferable)

How to cook rice: Add rice to cold water and heat on
high until it just starts to boil. Turn heat to low and cover.
After 20 minutes turn off heat and cool.
How to fry rice: Finely chop onion and minced garlic.
Put oil in large skillet on medium high heat, add garlic and
onion and saute until medium soft or transparent (4 to 5
minutes). Add rice and use spatula to mix rice and onions.
Add package of fried rice seasoning mix. Add soy sauce and
sesame seed oil. Mix into rice. Add additional items as
desired. May be warmed up in microwave. Refrigerate if not
all used.
