GROUND BEEF AND ZUCCHINI CASSEROLE (Serves 4 to 5) 1 lb. (3 small) zucchini 1 small onion 1 c. mushrooms, sliced 1 lb. hamburger 1 c. (1 lb.) tomatoes 4 to 6 Tbsp. oleo 1/2 tsp. garlic powder 1/2 tsp. oregano 1/4 c. grated Parmesan cheese salt and pepper to taste Wash zucchini; slice 1/4-inch thick; slice onion. Melt 2 tablespoons oleo in skillet. Saute onion until yellow; add 2 tablespoons oleo to skillet if needed and cook zucchini for 5 minutes over medium heat. Put onion and zucchini into good size casserole. Add 2 tablespoons oleo to skillet and saute mushrooms for 5 minutes over medium heat, stirring all the while. Add ground beef and brown. Drain fat. Add tomatoes and mix well. Pour beef mixture over zucchini and onions; mix well. Season with salt and pepper, garlic and oregano if you wish. Sprinkle grated cheese over top. Bake about 35 minutes in 375 degrees oven. (I substitute Mozzarella cheese for Parmesan topping.)
