ITALIAN MEATBALLS

1 lb. chopped hamburger meat
1 egg
approximately 1/2 c. Parmesan
cheese
approximately 1/2 c. bread
crumbs
1 to 2 Tbsp. parsley
2 to 3 Tbsp. oil (for frying)
salt and pepper

Mix all ingredients together in a bowl. When well
mixed, form into small meatballs. In a large frying pan heat
oil, then place meatballs in hot skillet and brown on all
sides. When cooked, can be combined with Italian tomato sauce
for a real Italian dinner. Place meatballs in sauce while
sauce is cooking.

Italian Tomato Sauce:
1 large can Italian tomatoes
1 can Italian tomato paste
1 small can Italian tomato
sauce
meat (sausage, beef or pork)
water
oil
In about one tablespoon of oil, brown meat real well in
a Dutch oven. When browned, add tomato paste and combine to
let brown for a few minutes. Add one can of water (fill up
paste can), salt and pepper to taste. Let simmer for 5 min-
utes, watching and stirring often. Add tomatoes which have
been mashed slightly with your fingers. Cover, leaving the lid
slightly opened. Simmer approximately 2 hours. Stir often.
If needed, add another small can of tomato sauce and 1/2 can of
water.
