KIDNEY BEAN, ZUCCHINI, BEEF CASSEROLE|
1 can kidney beans
2 c. zucchini, chopped small
2 c. cooked rice
2 tomatoes, chopped
1 clove garlic, chopped
salt, pepper to taste
1 green pepper, chopped
1 onion, chopped
Cook rice by directions. Saute onion and garlic. Add
zucchini, green pepper and tomatoes. Cook 5 minutes until
tender. Add kidney beans and simmer 15 minutes. Serve over
