CHICKEN REGINA

6 boned chicken breasts
6 slices Prosciutto
6 slices Provolone cheese
3 beaten eggs
2 c. seasoned bread crumbs
4 Tbsp. butter
1 c. flour

Pound chicken lightly to flatten. Put a slice of
cheese, then Prosciutto on the chicken breast. Roll up the
breast with the cheese and Prosciutto in the middle of it.
Roll the breast first into flour, then the beaten eggs and then
into the seasoned bread crumbs. The rolled up chicken breast
should be thoroughly coated. Brown the chicken breast in the 4
tablespoons butter on top of the stove.
For best results, brown the part of the chicken breast
which has a seam first. Transfer into baking dish and cook at
350 degrees in the oven for 30 to 40 minutes.
