SALMON PATTIES

1 (15 1/2 oz.) can salmon
1 egg, beaten
12 white saltine crackers

Drain salmon and remove skin. Crush crackers in plastic
bag with rolling pin. Combine salmon, beaten egg and cracker
crumbs. Shape into five patties. Fry in shortening in skillet
on both sides until done. Serve plain or with tartar sauce.
