CHICKEN CACCIATORE

Makes 4 servings at $1.10 each.

4 boneless, skinned chicken
breasts (4 oz. each)
1/2 c. sliced green onion tops
1/2 c. sweet green pepper
slices
1 large tomato, diced
1/4 c. chicken broth or water
1/2 tsp. leaf oregano,
crumbled
1/2 tsp. black pepper
1/4 tsp. leaf thyme, crumbled
2 garlic cloves, crushed
1 bay leaf
1/2 c unsalted tomato juice
2 c. hot cooked white rice
Combine chicken, green onion, green pepper, tomato,
broth, oregano, black pepper, thyme, garlic, bay leaf and
tomato juice in large nonstick skillet. Bring to boiling.
Lower heat and simmer, covered, 6 to 10 minutes or until
chicken is cooked through. Place each serving on bed of 1/2
cup hot cooked rice.
Microwave Directions For Chicken Cacciatore (650 watt
variable power microwave oven): Reduce oregano and pepper to
1/4 teaspoon; reduce tomato juice to 1/4 cup.
Place chicken in 2 quart microwave-safe casserole,
arranging thicker sides toward outside of casserole. Sprinkle
with green onion, pepper strips and tomato. Combine chicken
broth, oregano, thyme, pepper, garlic, bay leaf and tomato
juice; pour into casserole. Cover with lid. Microwave at Full
power 6 to 8 minutes until chicken is tender, rotating dish
one-quarter turn after 4 minutes. Let stand 5 minutes.
