MOM'S LAMB SHANKS|
4 lamb shanks
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
generous amount of sage
Mix together salt, pepper, paprika and sage. Rub lamb
shanks well with mixture. Wrap shanks in brown paper bag
tightly and refrigerate overnight. Brown shanks in bacon fat
and place in large casserole dish with 1 or 2 cloves of minced
garlic, 1 can tomato sauce, 1 small can tomatoes, 1 can sliced
mushrooms or fresh ones and 1/2 to 1 cup red wine. Cover and
bake at 325 degrees for 3 hours. Baste often.
