BASIL-GARLIC BASTE FOR FISH

2 lb. swordfish, sea bass,
halibut, barracuda, or
Mahi-Mahi
1 c. salad oil
1 c. white wine vinegar or
white wine
1 small clove garlic, mashed
1 Tbsp. parsley
1 tsp. salt
1/2 tsp. basil
dash of pepper

Combine all ingredients and marinate fish in it for 15
to 30 minutes. Remove fish from marinade and broil or barbe-
cue for about 6 to 8 minutes on each side. Brush several times
with the baste while cooking. Fish is done when it flakes
easily when tested with a fork.
