CHINESE STYLE HALIBUT

4 halibut steaks
1/4 c. soy sauce
1/4 tsp. grated ginger
4 tsp. cornstarch
1/2 c. thinly sliced onion
1/2 small green pepper, thinly
sliced
1 clove garlic, crushed
2 Tbsp. ketchup
1 c. water
2 medium tomatoes
1 Tbsp. oil

Place thawed halibut steaks in greased baking dish. In
a small bowl, combine 3 tablespoons of the soy sauce, ginger
and 1 teaspoon of the cornstarch. Brush this mixture over
halibut and refrigerate at least 1/2 hour. Bake at 450 degrees for 15
minutes per inch of thickness of the halibut. Saute onion,
green pepper and garlic in oil. Add ketchup and water. Bring
to a boil. Dissolve remaining cornstarch in remaining soy
sauce. Add to sauce. Cook, stirring, over medium heat, until
sauce is thickened and clear. Cut tomato in eighths; add to
sauce and heat thoroughly. Pass sauce with halibut. Yield: 2
servings.
