COMPANY CORNED BEEF

4 to 5 lb. corned beef
2 bay leaves
5 peppercorns
2 sprigs parsley
1 stalk celery, cut in chunks
1 small onion, sliced
whole cloves
2 Tbsp. margarine
1 Tbsp. prepared mustard
1/3 c. brown sugar
1/3 c. ketchup
3 Tbsp. vinegar
3 Tbsp. water

Wash corned beef thoroughly to remove brine. Place in
large kettle and cover with cold water. Add bay leaves,
peppercorns, parsley, celery and onion. Cover and simmer 3 to
3 3/4 hours (45 minutes to a pound). Remove hot beef to
shallow baking dish. Insert whole cloves into it to decorate
and season. Melt margarine; add remaining ingredients to
margarine and mix thoroughly. Cook over medium heat until well
blended. Pour sauce over corned beef and bake in moderate oven
at 350 degrees for 30 minutes, basting with sauce several times.
Makes 8 to 10 servings.
