SWEET AND SOUR CHICKEN WINGS
(Buffalo Wings)
3 lb. chicken wings, cut at
joint
1 tsp. salt
1 c. cornstarch
3 eggs, beaten
1/4 c. soy sauce
1/2 c. vinegar
1/2 c. sugar
3 Tbsp. catsup
1/2 tsp. salt
1/2 c. currant jelly or honey
or apricot jelly
2 Tbsp. lemon juice
cooking oil

Rinse and dry chicken on paper toweling. Sprinkle with
salt. Heat oil in saucepan or at 375 degrees in deep fat cooker.
Roll wings in cornstarch, then dip in egg to coat evenly. Deep
fry 3 or 4 at a time until lightly golden (about 5 minutes).
Drain on paper toweling. Place in shallow baking pan.
Combine soy sauce, vinegar, sugar, catsup, salt, jelly
and lemon juice in small saucepan. Heat to boiling, stirring
constantly. Simmer 10 minutes. Pour over chicken. Bake at
350 degrees for 30 minutes until glazed.
