6 boneless chicken breasts,
cut in strips
1/4 c. cooking oil
1 (20 oz.) can pineapple
1 large green pepper, cut in
4 carrots, cut in small strips

Sweet and Sour Sauce:
3/4 c. sugar
1/4 c. soy sauce
4 Tbsp. cornstarch
2/3 c. water
1/2 c. vinegar
1/8 tsp. ginger

Brown chicken in oil until brown; salt slightly. Drain
and remove from pan. Add pineapple, green pepper and carrots
and stir-fry over medium heat until pepper has changed color.
Add chicken and Sweet and Sour Sauce and simmer over low heat
for 10 minutes. Serve over rice.
