BEST-EVER FRIED CHICKEN

1 good-size piece salt pork
frying chicken, cut up
flour

Cut the rind off salt pork, then dice it into about
1/2-inch pieces. Melt down salt pork in either electric frypan
or regular frypan. Remove crisp pieces of salt pork from oil.
Flour chicken pieces; put in salt pork oil. Fry until golden
brown and crispy on 1 side, then turn and fry on other side.
Enjoy. (This is the only way that my family will eat fried
chicken.)
