BROILED ORANGE ROUGHY|
2 lb. orange roughy fillets
2 Tbsp. cooking sherry
4 Tbsp. butter
2 Tbsp. orange juice
salt and pepper
Rinse fillets and pat dry. Season with salt and pepper.
Melt butter and add cooking sherry and orange juice. Brush
fillets with butter mixture and broil about 7 to 10 minutes or
until fish flakes easily with fork. Makes 6 servings.
Tip: Line pan with foil for easy clean up.
