THAI CHICKEN WITH CASHEWS

chicken, uncooked (bite size
pieces)
minced garlic
grated fresh ginger

Saute in oil enough bite size pieces of uncooked chicken
for your family, adding minced garlic and grated fresh ginger.
When chicken is opaque and nearly cooked add:
1 can water chestnuts
1 can bamboo shoots
2 small onions, chopped
2 tsp. chicken bouillon
2 tsp. cornstarch mixed with
1/4 c. water
To make this a complete meal and contribute color, add
broccoli flowerets and grated carrots. Cook until all is warm
and cooked. In Thailand, this was served with a generous
amount of sauce, so if it has cooked down, add more water and
spices to your taste. It was served to us over the Thai
version of vermicelli, but can serve over rice. Each person
sprinkles cashew nuts over his serving.
