LIVER AND ONIONS|
1 1/2 lb. onions
6 slices calf's liver
salt and pepper
3 Tbsp. flour
6 Tbsp. butter
2 Tbsp. chopped parsley
Peel and slice onions. Trim and wipe liver. Season the
flour and use to coat the liver. Melt the butter in a large
skillet. Add the onions and fry until golden. Add liver
slices and fry for 3 to 4 minutes on each side. Stir in
parsley if using. Transfer to a warmed serving dish and top
with fried onions. Spoon pan juices over. Serve with boiled
potatoes and parslied baby carrots.
