CORNISH HEN FOR TWO

1 to 1 1/2 lb. Cornish hen,
split lengthwise
salt and pepper
1 slice bacon, cut in half
1 1/2 tsp. lemon juice
1/2 tsp. chicken bouillon
granules
1/2 c. hot water

Sprinkle hen halves with salt and pepper. Place cut
side down in a large shallow roasting pan. Place 1/2 a slice
of bacon on top of each half and sprinkle with lemon juice.
Dissolve bouillon granules in hot water and pour in pan. Bake
at 375 degrees for 1 hour and 15 minutes. Baste often with pan
drippings.
